SAVOURY VEGAN PANCAKES

 INGREDIENTS

  • 1/2 cup self raising flour
  • 1/2 cup chickpea flour
  • 3 tbsp fresh aquafaba (whipped)
  • 1 1/4 cup plant milk
  • 1 1/4 cup water
  • 1/4 tsp baking powder
  • pinch of salt
  • pinch of garlic powder
METHOD
  1. Preheat oven to 350ºF / 180ºC
  2. Whisk/blend all ingredients together on high for 1 minute until foamy
  3. Let sit in fridge covered for 30 mins
  4. Make bolognese style sauce with vegan mince (TVP/frozen quorn etc)
  5. Fry batter off in 6 equal amounts, 4-5 mins per side
  6. Fill pancakes with a large scoop of bolognese, and place enchilada-style into a baking dish
  7. Top with vegan cheese/cashew cream/savoury yeast etc
  8. Bake for 10-15 mins
