SAVOURY VEGAN PANCAKES
INGREDIENTS
- 1/2 cup self raising flour
- 1/2 cup chickpea flour
- 3 tbsp fresh aquafaba (whipped)
- 1 1/4 cup plant milk
- 1 1/4 cup water
- 1/4 tsp baking powder
- pinch of salt
- pinch of garlic powder
METHOD
- Preheat oven to 350ºF / 180ºC
- Whisk/blend all ingredients together on high for 1 minute until foamy
- Let sit in fridge covered for 30 mins
- Make bolognese style sauce with vegan mince (TVP/frozen quorn etc)
- Fry batter off in 6 equal amounts, 4-5 mins per side
- Fill pancakes with a large scoop of bolognese, and place enchilada-style into a baking dish
- Top with vegan cheese/cashew cream/savoury yeast etc
- Bake for 10-15 mins
