VEGAN CHEAT'S DAHL

INGREDIENTS:
200g coconut milk (1/2 tin)
200g kidney beans (1/2 tin)
200g lentils (1/2 tin)
salt + pepper to taste
200ml water

2 tbsp coconut oil
4 cloves garlic, minced
30g ginger, grated
1 tsp chili powder/flakes
1 tbsp cumin
1 tsp cinnamon
1 tbsp garam masala
5 cloves
2 bay leaves

100ml water
2 tbsp tomato paste
200g coconut milk (1/2 tin)

375g brown lentils

Coriander
Fried Onions
Mango Chutney
Coconut Yoghurt

INSTRUCTIONS:

  1. Blend mix
  2. Fry garlic and ginger
  3. Add spices
  4. Deglaze with water, add tomato paste and coconut milk
  5. Simmer 8 minutes
  6. Add kidney bean mix
  7. Add lentils
  8. Season to taste
  9. Serve with rice, and top with toppings
