WARM GLAZED FIG, VEGAN FETA & ARUGULA SALAD

INGREDIENTS:

SALAD:
1 bag organic baby arugula
1 cup walnuts
salt
1 tbsp maple syrup
2 dashes liquid smoke (hickory)
1 block TJs feta alternative, crumbled into blocks
8 ripe figs
1/2 red onion, sliced into half moons

DRESSING:
1 tbsp honey
1/4 cup balsamic vinegar (gold or dark)
1 finely minced shallot
1 tsp dijon mustard
1/2 lemon, juiced
dash of turmeric
salt + pepper

OPTIONAL:
1/4 cup pine nuts, lightly toasted
1/2 can organic chickpeas, roasted
1 cup farro, cooked (in stock)
1 pear, halved and sliced
ANY PROTEIN, cooked as desired


INSTRUCTIONS:

  1. Toast walnuts with a little salt, a little maple syrup, and a little liquid smoke
  2. Put all dressing ingredients into a mason jar and shake vigorously until combined
  3. Cut figs in half, brush with honey, and grill under high heat for 3 minutes
  4. Assemble all salad ingredients into bowl, add dressing, and toss to combine
  5. Top with protein if desired
