BANANA & BLUEBERRY MUFFINS


So this is a recipe that I've adapted from one by Angela Stafford in her book "Wild Vegan".

INGREDIENTS
  • 1 cup wholemeal Self Raising Flour
  • 1 cup Self Raising Flour
  • 2 tsp baking powder
  • dash salt
  • 1 tsp mixed spice
  • 2 tsp vanilla extract
  • dash almond extract
  • dash rosewater
  • 1/2 cup soy milk
  • 2 tbsp vegetable oil
  • 1 large banana (mashed)
  • 1/2 cup apple juice concentrate
  • 2 tbsp organic maple syrup
  • punnet blueberries

METHOD
1. Preheat oven to 180°C.
2. Sift dry ingredients together.
3. Blend wet ingredients and banana (not the blueberries) together (in a blender or with a stick mixer), and fold gently into the dry making sure not to overmix.
4. Incorporate the blueberries evenly, while trying not to break them.
5. Bake for 12-15 minutes, checking to see if they're done by how the tops of the muffins yield to touch (a skewer test is also acceptable).
6. Serve with a little bit of Nuttelex. Awesome.
