VEGAN CHICKPEA TUNA SALAD

 Ingredients:

1 tin of chickpeas
1/2 red pepper, chopped
1/2 red onion, chopped
1-2 celery with leaves, diced
1 sprig dill
1 carrot, grated
2 tbsp vegan mayo
1 tbsp tamari or soy sauce
1 tsp capers
1/2 lemon, juiced
2 tbsp nutritional yeast, optional
Salt, black pepper to taste

Instructions:

  1. Mash chickpeas
  2. Finely mince all ingredients and mix
